Penne a la Vodka

Tomato-vodka sauce

500g onions, sliced

13g garlic, sliced

100g butter

100g vodka

1.4kg canned tomatoes, puréed

250g creme fraiche

100g parm, grated

300g Red Ranch

Salt to taste

 

Cook onions, garlic and chili flakes in butter over low heat with salt until tender.

Add vodka and reduce by half.

Add tomato and creme fraiche and simmer twenty minutes. Stir in parm and Red Ranch.

Blend and season with salt.

To Serve

Toss cooked penne with lots of sauce, plate, and garnish with freshly ground black pepper, basil and more grated parmesan.
